Recycling At Work

Love Food Hate Waste

Visit the NSW government's Love Food Hate Waste website to better understand your businesses food waste and ways to save money and the environment.

 

A guide for the food/hospitality industry to help it reduce waste.

A toolkit is available on the Unilever Australia website, that quantifies the sources of food waste in a typical commercial kitchen before providing a plan for reducing waste. Offering context for the guide, Unilever stated that "over half the food produced in the world today is lost, wasted or discarded as a result of inefficiencies in the human managed food chain." Unilever conducted a survey of over 500 Australian consumers and reported that '81% of Australians believe it is important for foodservice operators to dispose food waste in an environmentally friendly way' while '50% would pay more when dining out for a restaurant that was implementing sustainable practices'. Along with the guide Unilever also released its World Menu Report, which looks at the 'sustainability of out of home dining'. Based on a global survey, the report found that consumers were most concerned about the sustainable practices in restaurants in Brazil and Turkey, while they were least concerned in Germany. When asked 'Who should take responsibility for ensuring that there is more transparency about the sustainable practices of places to eat?' most survey respondents looked to government, with restaurants and suppliers ranked second and third.
